Cooking and baking for the people you love remains one of the oldest and best ways to convey your appreciation for them. With Valentine’s Day around the corner, it’s the perfect time to try out new and special recipes. Whether you’re making a romantic dinner for your sweetheart or a fun creative meal for the family, this beautiful, easy to make beet hummus recipe will be just right for either menu!

Beet Hummus Recipe

Ingredients

  • 1 cup (250 ml) of canned cooked chick peas – drained
  • 1 cup (250 ml) of canned sliced beets – drained, keep the beet juice to add to mixture
  • 2 tablespoons of red wine vinegar
  • 2 tablespoons of tahini (sesame seed paste)
  • 1 tablespoon of olive oil
  • 1 tablespoon of horseradish (optional)
  • Fresh dill for garnish

Directions

Add chick peas, beets, and red wine vinegar in a food processor. Blend for 30 seconds. Add the tahini and olive oil, and then blend for two to three minutes or until smooth. Add beet juice to achieve the desired consistency. For an extra zing, add  the horseradish. Blend all ingredients until smooth. Serve it in a white bowl to contrast with the vibrant colour of the beets and garnish with dill. The beet hummus goes well with bread, crackers and veggies. I love serving it with a thinly sliced, toasted, day old baguette. The hummus can be stored in a covered container in the refrigerator up to three days.

Option

If time allows, instead of using canned beets, I recommend roasting fresh beets for this recipe.
