Summertime & the livin’s easy

The livin’s easy in the summer and let’s make getting the right nutrition fun and easy. With summer vacation on the mind and the kids out of school, keeping on track with your food and nutrition requires some planning. Three easy tips for easy nutrition in the summer 1. Experiment with a variety of fruits and veggies. There is no better time to check out local fruits and vegetables from your farmer’s market or farm gate. Try a new one each week. Experiment with combining flavour and textures. Last year, I made an interesting watermelon salad with cilantro, ginger, cucumber and lime. Popcorn – make it a healthy snack

Bursting Kernels When I started to work in the area of agri-food, I was introduced to the difference between the sweet corn and popping corn.  There are several types of corn.  Popcorn kernels are the only type that swell and burst when heated. Sweet corn can be enjoyed straight from the cob due to the natural sugar content in the kernels, which ranges from 9 to 44%. In comparison to sweet corn, ‘pop’ corn does not taste very good in its kernel form. Nutritional Profile On its own, popcorn is a good source of carbohydrates specifically dietary fibre. Strawberries – the wonderful, heart shaped fruit

Nothing smells more like summer than fresh strawberries. This sweet, sweet berry is not only rich in vitamin C and fibre; it has the celebrity status of the produce world!  Strawberry Facts Did you know strawberries are a member of the rose family? Strawberry first had the name strewberry, its name was changed to strawberry after farmers used to bring them to market on beds of straw.
